Extra virgin olive oil keeps better in a green bottle.

 

If we put a batch of extra virgin olive oil in green bottles, and another in transparent ones, and keep them in the light at room temperature (approximately 20°C), we will notice, after a certain period of time, that the typical features of extra virgin oil are only present in the darker bottles. The green glass can effectively screen the sun rays, which trigger the chemical reactions responsible for altering the aromatic compounds that give olive oil its typical fruity flavour.
