In Italy there are about 500 different varieties of olive trees. In our farm olive grove there are 27, typical of the Garda and Veneto area or from other areas of Italy, collected together to see how they react to the microclimate of Lake Garda, the extreme limit for the cultivation of this plant (45 parallel). In the garden there is also an ancient wooden mill of 1740, an inspiration to deepen the evolution of olive oil production through the centuries, which ends with a visit to the modern mill where, between mid-October and mid-December, The machines are running at full speed.
