Who’s afraid of blending?

 

Why does the idea of blending horrify oil purists? Perhaps it is because here we believe in selections, in the goodness of oils made from olives of a single variety, territory, tradition, and so forth. Our country however has a long tradition of creating blends of different varieties, a process that occurs in the mill, where the olives are pressed. Why? Because each cultivar possesses unique features and properties, which find their best expression when harmoniously combined. The same is true for wine. The blender knows the different characteristics of the olives and selects them so as to make that special cuvée that best meets the different needs of the consumer. The selector gives an important contribution to what Nature has to offer. Selecting properly means being able to express a concept of oil reflecting that of the producer. So why should we be afraid of blends?
