{"id":4372,"date":"2017-04-28T14:51:48","date_gmt":"2017-04-28T12:51:48","guid":{"rendered":"https:\/\/turri.com\/?p=4372\/"},"modified":"2017-05-02T15:00:35","modified_gmt":"2017-05-02T13:00:35","slug":"bruno-bassettos-recipe","status":"publish","type":"post","link":"https:\/\/turri.com\/en\/bruno-bassettos-recipe\/","title":{"rendered":"Bruno Bassetto\u2019s recipe"},"content":{"rendered":"<p>Shin of heifer with shallots<\/p>\n<p>INGREDIENTS (serves 6)<\/p>\n<ul>\n<li>1 boneless hind shin<\/li>\n<li>5 kg shallots<\/li>\n<li>peeled tomatoes<\/li>\n<li>rosemary<\/li>\n<li>bone marrow<\/li>\n<li>extra virgin olive oil<\/li>\n<li>raisin wine or <em>vin santo<\/em><\/li>\n<li>coarse sea salt<\/li>\n<li>pepper<\/li>\n<\/ul>\n<p>Cooking time: 3 hours<\/p>\n<p><em>Preparation<\/em><\/p>\n<p>Remove any excess nerves or fat from the meat, and season with salt, the crumbled bone marrow and hand-chopped rosemary. Tie up firmly and place inside a roasting tray with the shallots, peeled, generously drizzled with extra virgin olive oil. Roast in a pre-set oven (180\u00b0 C) for three hours. Half-way through, drizzle the meat with the raising wine and cover the tray with silver foil.<\/p>\n<p>Once roasted, cut the meat in half and slice it sideways.<\/p>\n<p><em>Presentation<\/em><\/p>\n<p>Remove the shallots from the roasting tray, blend them and pour the resulting sauce over the slices of beef. I suggest you serve this dish with boiled vegetables or mashed potatoes.
